Finally, dry roast fenugreek seeds, dried amla pieces, and dried curry leaves for 1–2 minutes to remove moisture and boost shelf life.
Spread everything on a plate to cool completely. This step prevents the powder going rancid quickly.
Once fully cool, add all roasted nuts, seeds, herbs, and dried dates/raisins (if using) into a completely dry mixer or spice grinder.
Pulse in short bursts so the nuts don’t become paste.
Scrape the sides and grind again until you get a fine or slightly coarse powder.
Store in an airtight glass jar in a cool, dark place or fridge to protect the healthy fats.
